Guacamole, freshly squeezed orange juice and whatever chocolate-based confection I can get my hands on amount for 80% of my diet. I shall therefore share my recipes.
The Janice
It’s the one no one really cares about. It’s not great, it’s not bad. Sometimes it’s not even guacamole, but it’s something to dip your tortilla chips into.
- 2 avocados, fat and ripe
- 1 table spoon finely chopped tomato
- 1 tea spoon of whatever Mexican spice mix you can find
Mix the avocado in a blender, add the diced tomatoes and mexican spices, stir with a fork.
The Mr. Morgan (My favorite)
It’s the real deal, and it will please you, but at the same time taste a bit sour and leave some sting in its wake.
- 2 avocados, fat and ripe
- 2 table spoons finely chopped red onion
- 1 table spoon finely chopped coriander
- 1/2 teaspoon finely chopped jalapeño
- Juice of 1 lime
- Salt to your taste
I blend the onion (which is really 1/4 of an average sized onion), coriander and jalapeño first, and then I add the diced avocado and mix again. Add the lemon juice and a pinch of salt, mix again, et voilà!
The South-African
You think you’re ready for it, but you’re not.
- 2 avocados, fat and ripe
- 2 table spoons finely chopped red onion
- 1 table spoon finely chopped coriander
- 1 tablespoon finely chopped jalapeño, if you dare (otherwise, 1 teaspoon should be fire enough)
- 1 table spoon finely chopped red pepper
- 1 table spoon finely chopped tomato
- Juice of 1 lime
- Salt to your taste
Blend the onion, coriander, red pepper and jalapeño first. Add the diced avocado and mix again. Add the lemon juice and a pinch of salt, mix again. Add the chopped tomato and stir with a fork.
